(serves 6)
Ingredients:
6 catfish filets
1/2 teaspoon garlic powder
1 teaspoon cayenne pepper
I teaspoon black pepper
1 teaspoon salt
1 tablespooncrushed dried thyme leaves
1/2 teaspoon paprika
1 stick butter
1/4 cup dry white wine
Juice of 1 lemon
Procedure: Wash filets
and pat dry. Set aside. Combine all dry
ingredientsin a bowl and set aside. Melt
the butter in a pan. Add lemon juice and
mix well. Dip the filets in the butter mixture.
Sprinkle the filets liberallywith the spice
mixture on both sides and set aside. Heat
a black iron skillet until very hot. Carefully
place the filets in the skillet and cook
for about 2 minutes on each side. Keep moving
filets with a spatula to prevent sticking.
When filets are cooked, remove from skillet.
Remove skillet from burner. Pour butter
mixture into skillet, quickly add the wine
and stir. Pour butter mixture over filets
and serve immediately
